If you haven't tried it, I highly recommend doing so if you have a chance. Most people will only enjoy foods that are very similar to what they've had before. But now try to upgrade your foods.
From the earliest times Persians have been known for their hospitality. This recipe is one of my favourites and always seems to please guests at the dinner table. The jewelled rice gives it a sweet, tangy, mouth-watering taste and, although the dish takes a bit of time, it’s pretty easy to make. It’s worth it because the end result is so spectacular.This fool-proof recipe for Persian chicken with a wonderfully fragrant barberry rice is a true crowd-pleaser. It both looks stunning and tastes delicious, making it the perfect main dish to serve at a dinner party or family gathering.
In this recipe;
1-I roasted the whole chicken with its skin on. Roasting the chicken with its skin on will results in less fat in the cooked product, provided the skin is removed before consumption.
2- cook the rice , similar to how pasta is made. Be sure to not over cook the rice, just like you would keep the pasta al dente.
3-Add the cleaned barberries and stir for a minute at low heat - not more, as they burn easily. Then Turn off the heat. Add some sugar set aside.
4-Place the prepared chicken over the rice and some barberries on top.
Enjoy the Barberry Rice with Saffron Chicken and some salad.
